I often make Korean food in my kitchen complete with my own homemade kimchi. (Marianna Szucs)


I love kimchi and often make it at home. Kimchi provides room for creativity and I also experiment with the ingredients. In the beginning, I added kimchi to Korean meals I made in my kitchen, playing with the ingredients and spiciness. This happened more often after the pandemic prevented me from going to my favorite Korean restaurants.

Over time, I tried eating kimchi with other meals as a side dish to achieve an unusual taste. Adding kimchi to green salad made a slightly bland taste refreshingly Korean.

Next, I thought of more creative combinations using kimchi. My first attempt was with potato waffles, and it turned out amazing.


Then I swapped the traditional Hungarian side dishes of mash and pickled gherkin with kimchi for my Sunday meal of breaded pork cutlet with steamed vegetables. Just glancing at the kimchi made it super appetizing.

I also tried to invent a healthier version of the popular chicken burger, so instead of fries, I used grilled zucchini and put kimchi under the whole wheat bun.

Finally, I love eggs in any form, so I added kimchi to my egg creations. The kimchi's spiciness and gorgeous red color complement the simple flavor and yellow color of eggs. And nice arrangements also made the food more appetizing.
