A British celebrity chef who once taught culinary superstar Gordon Ramsay and earned three Michelin stars has praised kimchi.

The online British daily Independent on June 22 posted an interview with Marco Pierre White, who said he is a "huge fan of Asian cuisine" and loves kimchi.

Mentioning his lifelong love of vegetables, he said, I was a vegan for nine months of my life. That's how I discovered kimchi."

He said the spicy condiment goes great with British food, adding, "Kimchi cuts the fat."

"I used to always have my pork pie with either English mustard, or with Branston's Pickle. Now I have it with kimchi, the chef said.

The article said, "It adds another dimension, he says, and works wonderfully well with a slice of mature cheddar, 'it cleanses the palate for the next mouthful.'"

Announcing plans to make his own kimchi, White said, "Eating is one thing, and enjoying it is one thing, but by making it, you get this great understanding."

He also mentioned the five-week Kooking Kimchi competition, which began on June 21 and is being hosted by the Korean Ministry of Agriculture, Food and Rural Affairs and Korea Agro-Fisheries Trade Corp. Contestants must share a video or photo of their favorite dish featuring kimchi on Instagram, and the two winners earn the right to attend a kimchi masterclass taught by the chef.
