Kimchi has many varieties each featuring a different vegetable as the main ingredient. I love the taste of kimchi, the vegetables, the numerous variations and kimchi's ability to go with just about any food.

The COVID-19 pandemic has created many online opportunities to learn more about Korean culture. I was lucky enough to participate in a cooking class with chef Jun Jomin as a gift and make kimchi pancakes for the first time.

Having worked for 10 years as a travel writer and visiting more than 50 countries, Jun is now a certified chef in Korean cuisine and holds classes (both offline and online) in Korean home cooking in Seoul.


I received an email on the ingredients necessary for making two dishes to prepare everything in advance.

The class began with a short presentation on kimchi's history, variety and uses. Then I prepared the ingredients together and sliced and stirred following the chef's instructions. I felt as if I was in the same kitchen with her despite being thousands of miles away.

Both dishes were delicious. I had a guest for whom I prepared for lunch freshly prepared Korean food. I'm sure that I'll make both foods often because they're easy to prepare, delicious and nourishing.
